Don’t know about you, but I love salads. Especially the creamy ones. I know what you’re thinking, “OMG they are so full of “non-healthy ingredients” and the “oooooohhhs” and the “Nooooooos” but, I don’t care, I love ’em the way they are and I wouldn’t change anything about t anhem or change them for anything less sinful. Period. But that doesn’t mean, a big bowl of fresh vegetables, tossed with or without chicken chunks, covered in classic vinagarette or French Dressing doesn’t leave you satisfied. All of them have a special place in my heart, according to my mood.

Always remember to chill your salads before serving. Cover your serving bowl with cling wrap and pop it in to the refrigerator for 2-3 hours for best results.

Today I’ll be teaching you how to make:

  1. Mayonnaise
  2. French Dressing
  3. Thousand Island Dressing
  4. Red Beans Salad
  5. Creamy Potato Salad
  6. Classic Macaroni Salad
  7. Russian Salad


There are many different ways in which Mayonnaise can be made. You can make it with whole egg or egg yolks. Today I’m gonna teach you how to make Mayonnaise – the classic egg yolks way.

You can use an electric beater or a hand whisk ( provided your biceps are as toned as Arnold Schwarzenegger šŸ™‚Ā just kidding). When dealing with raw eggs always Ā be very clean,Ā hygieneĀ in kitchen is a paramount.

The ingredients need to be at roomĀ temperatureĀ so plan ahead please. Try to add oil in a form of thin stream because only then the egg yolks getĀ emulsified with the oil. You can use olive oil as well but try to use non-virgin olive-oil otherwise, the flavor will be too over-powering. Try mixing half ofĀ regularĀ oil with olive oil.

Also, avoid making mayonnaise in wet and humid weather as it will become greasy and heavy.

What you need

Egg yolks————————- 2
Oil——————————— 2 cups
Salt——————————– 1/4 tsp
White pepper——————— 1/4 tsp
Mustard paste——————– 1 tsp
Lemon Juice/vinegar———— 2 tbsp
Castor sugar———————- 3/4 tbsp

How it’s made

  1. Take egg yolks in a clean, dry bowl.
  2. Now whisk them to thick and creamy consistency.
  3. Very slowly add oil, very little at a time.
  4. If you add too much oil at one time, the mixture will split.
  5. Once you incorporate 1 cup of oil, add in vinegar and then proceed.
  6. Once all the oil has been drizzled into the mayonnaise, a tablespoon of vinegar (again) has been added, add in the seasonings and it’s done!

French Dressing

What you need

Vinegar————————— 1/4 cup
Oil——————————– 1/2 cup
Salt——————————- 1/2 tsp
White pepper——————— 1/2 tsp
Mustard Paste——————– 1 tsp
Garlic—————————– 1/2 tsp freshly mashed

How it’s made

  1. Take a clean glass or plastic (jam) bottle.
  2. Add in all of the ingredients, close the lid tightly, shake well for 2-3 minutes.
  3. Drizzle over beautifully cut raw vegetable salad and mix well.

Thousand Island dressing

What you need

Mayonnaise———————— 1 cup
Chili Sauce————————- Ā 2 tbsp, the thin, soup chili sauce
Lemon Juice———————– 1 tsp
Ketchup————————— 1 tbsp
Hard Boiled egg white ————- 1

How it’s madeĀ 

  1. Whisk together mayonnaise, chili sauce, lemon juice and ketchup.
  2. Add in finely mashed hard boiled egg’s white, stir to mix.
  3. Chill in theĀ refrigerator.
  4. Keeps well in the refrigerator or an air tight bottle for 3-4 months.

Red Beans Salad

What you need

Red beans (lobia)—————— 2 cups pre-boiled
Onion—————————— 1 large, finely chopped
Cucumber————————- 2 finely chopped
Tomatoes————————– 2 finely chopped
Salt——————————– 1/2 tsp
Black pepper———————- 1/2 tsp
Lemon juice———————– 3 tbsp
Ketchup————————— 2 tbsp, heaped
Sugar—————————— 1 tsp
Fresh coriander——————– 2-3 tbsp, finely chopped
How it’s made

  1. First chop vegetables and mix them with read beans in a deep, large bowl.
  2. Now throw in the rest of the ingredients except lemon juice.
  3. Give everything a good mix and leave it for 2-3 hours for all the flavours to meld.
  4. Right before serving, add in lemon juice, toss again and it’s ready to be eaten alive.
  5. Serve chilled.

Creamy Potato Salad

What you need

Boiled Potatoes——————— 2-3 large, cubed, boiled
Spring onions———————– 3-4 tbsp green part, finely chopped
Onions—————————— 1/2 onion finely chopped or as needed
Mayonnaise————————- 1/2 cup
White Pepper———————– 1/4 tsp
Salt——————————— 1/4 tsp
Lemon Juice———————— 2 tbsp
Mustard Powder——————– 1/4 tsp
Cream—————————— 2 tbsp
Milk——————————– 2-3 tbsp

How it’s made

  1. Take a clean, dry bowl and whisk together mayonnaise, cream and milk.
  2. Add inĀ seasoningsĀ along with mustard paste and lemon juice.
  3. Now throw in potatoes along with the rest of the vegetables and give everything a good mix.
  4. Serve Chilled.

Classic Macaroni Salad

What you need

Elbow Macaroni———————– 4 cups, pre-boiled
Cucumber—————————– 1 finely chopped
Vinegar——————————- 2 tbsp
Salt———————————– 3/4 tsp
Mayonnaise————————— 1/2 cup
Mustard Powder———————- 1 tsp
Onion——————————— finely chopped
Capsicum—————————– finely cubed
Sugar——————————— 2 tsp


  1. I am using elbow macaroni, you can use any type of macaroni or pasta you like.
  2. To stop the boiled macaroni from sticking together, pour a tablespoon or two of oil, once they have been boiled and rinsed. Or right before using them, rinse them again and all your paste or macaroni will easily separate.

How it’s made

  1. Toss everything together, mix well and that’s it. Couldn’t be any easy, eh? šŸ˜€
  2. Serve chilled.
Serve with ButteredĀ Garlic fried rice, Chicken fried rice, Chicken Roast or Pilaff (Palao) or just about anything.


Russian Salad

What you need

Apples——————————– 2 cubed
Cucumber—————————- 2 cubed
Potatoes—————————— 2 cubed
Carrots——————————- Ā 2 cubed
Peas———————————- Ā 1 cup boiled
Hard Boiled Eggs———————- 2 sliced or cubed (optional)
Mayonnaise————————– 4 tbsp
Cream——————————– 4 tbsp
Sugar——————————— 1 tsp
White pepper————————- 1/2 tsp
Salt ———————————- 1/3 tsp
Black Pepper————————– pinch
Spring Onions————————- 1 tbsp (optional)
Coriander—————————– 1 tbsp (optional)
Thousand Island Dressing————- for drizzling over hard boiled eggs

How it’s made

  1. Take a clean, dry big bowl and throw in all of the fruits and vegetables.
  2. Give everything a gentle mix and pour in the rest of the ingredients except the Thousand Island Dressing, mix mix and it’s ready to serve.
  3. Decorate with Ā Thousand Island Dressing on top.
  4. OR
  5. Mix everything together except the slices of hard boiled eggs and Thousand Island Dressing.
  6. Arrange hard boiled eggs slices on top and drizzle ThousandĀ IslandĀ dressing over them.
